             It is commonly believed that the more citrus tasting or sour a fruit is, the higher the vitamin C content. The major food sources for this vitamin are; citrus fruits, tomatoes and potatoes. Therefore the above theory is true but other fruits also have high vitamin C content, partly proved by the pH test, yet supported by the second table showing vitamin C concentration/cm.

             Vitamin C helps the formation of connective tissues, especially collagen fibres. This vitamin is found in fresh fruit. The body is unable to store vitamin for any length of time, as it is water-soluble. Therefore it must be replaced continually, as it is a very important vitamin. People who do not get enough vitamin C develop the disease known as scurvy, in which the bones, joints and gums are affected. Many sailors used to get scurvy because they had no fresh fruits and vegetables on board the ship. .
             Vitamin C also contains antioxidants that act against free radicals in the body, reducing the risk of cancer.
             EVALUATION.
             The results obtained were fairly conclusive; however, the following limitations have to be taken into consideration.
             Vitamin C decreases with temperature. High nitrogen fertiliser rates can lower vitamin C levels in citrus fruits. Proper potassium levels are also needed for good vitamin C levels. Additionally, climate, especially temperature and total available heat; affect vitamin C levels. Areas with cool nights produce citrus fruits with higher vitamin C levels. Hot tropical areas produce fruit with lower levels of vitamin C. Environmental conditions that increase the acidity of citrus fruits also increase vitamin C levels.
             This vitamin decreases during the ripening process, therefore the freshness of the fruit has to be considered. Immature fruit has the highest levels. The position on the tree also affects vitamin C levels. Since sunlight exposure enhances vitamin C levels, fruit positioned on the outside of the tree and on the south side have higher levels.
