Cava


            Why is Spanish Cava a delightful wine to drink? Many believe that its location and grapes types make the wine unique. Cava is made in the traditional style by the Methode champenios the essence of the wine. Cava is well known at celebration but today there an increase of demands in restaurants. Many restaurants will serve the smooth, light and sweet taste with lunch, even ending with a glass with dessert. Cava bubbly has a great history and tradition, which is taking, over the culinary field. People have many different types of tastes so the makers of Cava made several types from sweet to dry sparkling wine such as extra brut, brut, extra dry, dry, semi dry, and sweet. .
             In the late nineteenth century Josep Raventos produce the well known Cava. Josep Raventos was a member of a wine club known as "Seven Creek Sages" (History of Spanish ). They meet each week at Santi Sadurni d"Anoia area to talk about their ideas of champagne. One night they came to the conclusion to explore other possibilities like using grapes varieties in Spain. As a group they became up with a method to make wine. With the new methods they invested in vineyards, equipment and staff.              The Spanish name cava (Catalan for cellar) is reference to underground cellar where wine was aged (History of Spanish ). Before the Spanish buddly was popular it was referred as Spanish champagne. Cava name spared because in the 1970 the European Union banned using the term Champagne, accept sparkling wine made in the Champagne area of France. When thinking about, the European Union gave Cava a rare identity. Years later there was some complication, the D.O (Denominanaion de Origen) rules were applied to Cava. The production was a limited by law. Cava had to became of part QSWPSR (Quality Wine Produced in Specific Region) to be listed as quality of it location of the vineyards (History of Spanish ).
