Many people ask me if it is difficult to live as a vegetarian. They presume that I must eat boring meals that have little variety. However, Indian vegetarian food has many diverse types of cuisine that I can eat.
One type of food that is basically sweets is called mithia. For example, the most famous is the ladoo. It is made of sugar, ghee (Indian sweet butter), and flour. A ladoo is light tan and is shaped like a small ball that fits in the palm of your hand. Ladoos are usually made for guests and for great celebrations or holidays. Another sweet is the thul-ni-sukhadi. This is made of sugar that is melted in water. The gooey sugar is then mixed with sesame seeds. The mixture is spread out on a plate. After it hardens, the sukhadi is cut into small rectangular pieces. Sukhadi can also be made with other ingredients as well, such as almonds or pistachios. In most mithia, half of the actual ingredients are usually sugar. For example, when making sukhadi, if you use one cup of sesame seeds, then you would add one cup of sugar as well. Ladoo and sukhadi are only two examples of sweet food. There are over a hundred different types of Indian mithia that a person can eat.
